My Mom Used To Make A Casserole She Called ” Salmon, Peas, And Rice”.?
It had all these ingredients and a white sauce with maybe egg or sour cream that held the other ingredients together. I can’t find it on any recipe sites. Anyone have the recipe? Thanks JenM

never heard of it. Rachael Ray made a tuna casserole on her show the other day. It had peas and mushrooms in a white sauce over noodles. maybe you could use it to recreate your mom’s recipe…..http://www.foodnetwork.com/food/recipes/…

Salmon Casserole
15 ounce can salmon
3 green onions, finely sliced
2 celery sticks, finely sliced
1 tablespoon butter or margarine
1 cup cooked white rice
8 ounce can green peas
1 cup shredded cheddar cheese
2 eggs
1/2 cup half-and-half
Dash salt
Dash black pepper
Dash hot pepper sauce
Fresh celery slices, for garnish, optional
1. Drain salmon. Reserve liquid.
2. Flake salmon pieces, removing bones.
3. In a skillet, melt butter. Saute onion and celery for a few minutes until just soft.
4. In a bowl, combine salmon, cooked rice, sauteed onion and celery, peas, salmon liquid and cheddar cheese.
5. Beat eggs and half-and-half. Add to mixture with seasonings.
6. Turn mixture into a lightly greased baking dish.
7. Bake at 350 degrees for about 40 minutes or until set and lightly brown on top.
8. Let stand for a few minutes before serving.
9. Garnish with fresh celery, if desired.
