don’t marinade and don’t cook, just have it as a salad with a light dressing

You don’t want to marinate the spinach for a salad. It will wilt, you just want to toss it. You want to eat it fresh, that way it won’t lose it’s nutrients.

No need to marinate, just wash and spin dry in a salad spinner if you ahve one (otherwise shake dry as best you can).
You do not need to blanch or cook them. Just make a dressing. something like this:
1 part honey (e.g. 1 tsp)
2 part balsamic vinegar (e.g. 2 tsp)
6 part extra virgin olive oil (e.g. 2 tbsp)
mix the honey and vinegar together so taht the honey dissolves then add the oil and mix it all together. easy peasy. I also add salt a pepper as required, although this depends what else is in teh salad. some toasted pine nuts and avocado would be delicious on top!
