Does Anyone Know Any Good Recipes That Only Include Vegetables And/or Cheese?

i dont how to cook. so if you anything easy to make itd be nice:]

    Cheesy Potato Casserole…You can use 8 oz of shredded cheddar and 8 oz of cubed Velveeta in place of 1lb American Cheese…cube the Velveeta as small as possible for melting purposes…
    Cheesy Potato Casserole
    8 medium red potatoes, cooked and diced
    1 lb. sliced American cheese
    1/2 cup chopped onion
    1 cup mayonnaise
    1/2 lb. crispy bacon, crumbled
    1/4 cup stuffed green olives, sliced
    Salt and pepper to taste

    Mix together the first 4 ingredients; season. Put into a 9×13 pan. Sprinkle bacon bits and olives over the top.
    Bake at 325° for 1 hour, uncovered

    Vegetable soup
    1 small onion chopped
    2 stalks celery chopped
    2 large chopped and peeled potato
    2 cans of mixed vegetables drained( or 2 pkg frozen)
    1 summer squash chopped
    1 zucchini chopped
    1 can petite diced tomatoes
    1 1/2 cups of water
    2tbs olive oil
    in a large pot add oil and heat on med high add onions and celery stir constantly and cook till just soft .
    add all other ingredients( may need more water if all ingredients are not covered) and cook for 30 mins on med heat or until potato’s are soft enough to put fork through them..I like this with a grilled cheese sandwich.

    I like quesadillas. All you need for quesadillas is: Cheese (whatever you prefer), 10 1/2 flour tortillas, and a type of meet (you could use chicken steak or beef or vegetables if you are a vegetarian). put the cheese inside and the meat. fold the tortilla in half. put it in the microwave to melt the cheese. then you can cut it apart and eat it.

    You can make a nice and easy vegetable sauce for any pasta.
    Follow boiling directions on pasta package.
    Thinly slice the following:
    zucchini – 1 medium
    mushrooms – 8 oz
    onion – 1 small
    garlic – 2 cloves
    Add approximately 3-4 tablespoons on med. heat cook onions first till slightly transparent, then add the other veggies till tender about 5-7 minutes. Add the can of crushed tomatoes, add about 2 tsp. salt, 1 tablespoon oregano, 1/2 tsp. pepper and about 1/4 cup (good) pecorino romano cheese and simmer for about 15-20 minutes.
    Pour sauce over cooked pasta and you have a delicious meal.
    (Don’t cook the pasta until the sauce is done because the pasta will stick together.)

    A squash cassarole is great and you can add zuchinni and lots of CHEESE. My mothers recipe is below:
    2 med squash
    2 med zuchinni
    1 onion
    3-4 cups of grated cheddar chz
    i can of Cream of Mushroom
    2 tbl butter
    Salt and Pepper to taste
    Heat the oven to 350 degrees and butter a glass dish 12 x 6.
    Cut squash and zuchinni in round slices. Not too thick or too thin. Add to a pot of boiling water. Let boil for about 15 mins or until tender *If too tender then the cassarole will not be very hearty. Do not over cook the squah and zuchinni.
    Drain and put in bowl with diced onion (dont have to use all the onion if you dont like onion much) add canned cream of mushroom, 2 cups on the cheese and salt and pepper to taste. Mix together.
    Transfer to baking dish. Add dollups of the butter on top of the ingrediants in the dish. This will be great for taste and browning on top. Bake for 20 mins or until slighty brown on top.
    *A few minutes before you take out of oven add the rest of the cheese all over the dish.

    mashed potato tacos
    corn tortillas
    mashed potatoes (put inside tortillas and fry until hard)
    put lettuce, cheese, onions, and homemade salsa on em, they are delish!
